Now I want to talk about Kombucha. That is obviously utterly unrelated to these Banana Oatmeal Cookies, however I understand you won't obey.
Let me start off by saying that my husband beverages apple cider vinegar mixed with warm water every morning to decrease inflammation or anything like that.
He claims it's magical. I assert it's nasty.
While I know this will seem spectacular (because it is)I literally dry heave in the sight and smell of the early ritual to a daily basis. He loves that about me personally.
Depending upon this reaction, one would think that I would stay far away from Kombucha, directly? I mean, after all, it definitely has a vinegary tang.
However, for whatever reason, I keep trying it. I Would like to enjoy it SO DANG BAD.

While I am not promising these banana oatmeal biscuits are the least bit healthy (because hello sugar and butter), I'm claiming that they are delicious.
They have the ideal amount of banana flavor and a lovely chewy feel as a result of its oats. The chocolate chips are simply an added bonus.

BANANA OATMEAL COOKIES
1/2 cup unsalted butter, at room temperature
1 cup packed light brown sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1 cup all-purpose flour
1 tsp baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 1/4 cup old fashioned oats
1 cup semi-sweet chocolate chips
Line baking sheets with parchment paper.
From the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.
Scrape the sides of the bowl and mix in the egg until completely incorporated. Scrape the sides of the bowl and add in the mashed bananas and vanilla.
In a medium bowlwhisk together the flour, baking soda, salt and cinnamon.
Gently add the the flour mixture to the banana mixture and blend until just blended.
Scrape down the sides of the bowl and then stir to recombine.
Stir in the oats and chocolate chips and blend until incorporated.
Use a medium cookie scoop try these out (about 1.5 tbsp ) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for about 9-11 minutes.
Remove cookies from the oven and then gently press on the tops of each cookie with the bottom of a drinking glass. Since these cookies do not spread considerably, this will help give them a traditional cookie shape.
